Wow. Nice episode and I agree with commitment. We all commited to be a Scrum Team member in according to values described in the Scrum Guide.
During Sprint planning my explanation is :
Commitment is a deal between PO and Devs what need to be done, i.e. Sprint Goal is forecast for around 80% of capacity. If we finish as a team we win, we can celebrate.
Forecasting it is all what would like to deliver during a time period i.e, Sprint, Release, Version, milestones.
Finally we have to forecast to have a opportunity to be commited.

I fully understand the issues with story points but would be nice if you spent time showing how to project a roadmap completion date without needing to breakdown all PBIs. We only keep 2 sprints worth deep of PBIs.

How do we fix the mindset of Committment in people who think that a Scrum Team is committed to finishing all user stories they signed up for in Sprint planning and MUST achieve a 100% of Sprint goal! This is how it's being misused and Team is also frustrated by this mentality.
