Ingredients
2 karela/bitter gourd thinly sliced
10 -12 bhindi/okra thinly sliced
1 raw banana thinly sliced
1 sweet potato thinly sliced
Oil to fry
Salt to taste
2 tbsp cornflour
1 tsp Chaat masala

Method
- Chop all the veggies - bitter gourd,okra,sweet potato and raw banana very thinly.
- In a bowl add the karela/bitter gourd, cornflour and mix well.
- In a pan heat some oil then fry the veggies one by one until they turn crisp and golden.
- Place them into tissue paper so that it soaks oil
- Repeat the same procedure for all the veggies and then sprinkle some salt and chat masala over the veggies.
- Kurkure Vegetables is ready to be served!

This recipe is so universal, you can just use the vegetables you have at home or available in your country. Will try it with some european vegetables insha Allah. I just can't get friends with bitter and okra but maybe one day. :)
