A Highland cow, also known as a Highland cattle or simply "Heilan coo" in Scots, is a Scottish breed of rustic beef cattle. They are known for their distinctive appearance, characterized by long, shaggy hair, and long, curved horns. Highland cattle are well-adapted to the harsh conditions of the Scottish Highlands, where they originated. They have a double coat of hair, consisting of a thick, woolly undercoat and a longer, coarser outer coat, which provides insulation against the cold and wet weather.
Highland cows are valued not only for their hardiness but also for their flavorful, lean beef.
