Why does curd shatter? Sometimes it's fine, sometimes the milk curdles before I'm at 20°C. I'm stumped. Help, please.

Thanks Tracy. Shame I didn't watch this earlier. Great info. Now to try ans=d save this brie. Slowly slowly catchy monkey. Or the chooks and cheesetax are getting lucky.

During the 10 minute intervals (30~35 minute total) do you keep the heat/temperature at a certain level, or turn off heat after first curd cut and let the temperature drop normally?
