Roasted Snapper with Fennel and Citrus dressing

For the snapper:
-Olive oil
-salt and pepper
-mandarin zest
-lemon zest
For the Citrus Sauce
-1 cup mandarin juice
- 1/4 cup lemon juice
-2 diced mandarins
-1/2 diced lemon
- 1/2 cup butter diced into small cubes
-toast 1/2 tbsp fennel seed then add the mandarin and lemon juice
-add each butter cube one at a time and stir until fully melted before adding the next one
-add some fennel fronds
For Fennel Salad topping
-shave half of a fennel bulb and toss with olive oil, salt and pepper
Top Snapper with Fennel Salad and Citrus Sauce 🍊
