these frozen snickers popsicles are gluten free, dairy free, and refined sugar free, and can even be made high protein! they’re so good and so easy to make.
for the popsicles:
•1 cup unsweetened, plain yogurt (i used dairy free)
•1/4 cup material peanut butter (or any other nut/seed butter)
•1 or 2 tbsp sweetener of choice (raw honey, pure maple syrup, etc.) or 1 scoop vanilla or peanut butter protein powder
for the caramel sauce:
•1 tbsp cashew butter (or other nut/seed butter — peanut butter works)
•1 tbsp raw honey or pure maple syrup
•1 tsp water
•1/4 tsp pure vanilla extract
•1/8 tsp salt (if using unsalted nut/seed butter)
for the chocolate shell:
•6oz dark or semi- sweet chocolate (i use dairy free & refined sugar free)
•1 tbsp coconut oil
other ingredients:
•chopped & whole peanuts
instructions:
1. add the yogurt, peanut butter and sweetener to a bowl and mix until smooth.
2. place 6 dollops of the yogurt mixture on a tray lined with parchment paper and smooth them out.
3. next mix together the caramel sauce until smooth. if it’s too thick, add more water. if it’s too watery, add more nut butter.
4. drizzle the caramel over the yogurt dollops then top with chopped and whole peanuts.
5. place a popsicle stick in each yogurt dollop then place in the freezer until the yogurt is frozen.
6. once frozen, melt the chocolate with the coconut oil, stirring frequently so it doesn’t burn.
7. remove the popsicles from the freezer and coat in the melted chocolate then place back in the freezer until the chocolate shell hardens.
8. once the chocolate is hardened, remove the popsicles from the freezer and enjoy (i like to let them sit out for 5-10 minutes before eating so the yogurt filling is soft!).
