Pistachio Cheesecake Recipe

Ingredients:
Cheesecake filling:
30g cream cheese, at room temperature
100g sour cream
20g sugar
1 egg
15g flour
1/2 tsp vanilla extract

Crust:
50g biscuits
14g butter

Pistachio Paste:
250g pistachio
220ml water
110g sugar
Lemon

Preparing the Pistachio Paste:
In a saucepan, add sugar and water. Set the pan to medium high heat and let cook stir until boiling. Add some lemon. Boil for 15 min. In a pan, add pistachio and roast for 3-4 min. Beat the pistachios together using a blender until they turn to small pieces. In medium bowl, add the pistachio and sugar sauce and mix.

Preparing the Crust:
Run the biscuits in a blender to fine crumbs. Melt the butter and add to the biscuits.

Preparing the Cheesecake filling:
Preheat the oven to 160°C.
In a large mixing bowl, add cream cheese, at room temperature sour cream, sugar, egg, flour and vanilla extract. Mix until the mixture is smooth and creamy. Bake the cheesecake for 1 hour.

At what temperature should I bake the pistachio cheesecake? Please advise.

I make it by making the pistachio paste, but i dont add oil and i let it blend for up to 15 minutes, it becomes really smooth. I then fold that paste into the cream cheese mixture. Yours with the thick layer and plain cheesecake looks good. Great for people that dont like pistachio to enjoy.
