Cheesy Arepas!
Serving Size: 2 People (makes 4 arepas)
Ingredients

- 2 Cup Pre-Cooked Cornmeal (Brand :PAN)
- 2 cup Warm Water
- 2 Tbsp unsalted butter (Room Temp)
- 1 Tsp salt
- 1 cup Mozzarella Cheese
- Additional cheese will be needed for stuffing. (1 Cup)
Directions

- In a bowl add the cornmeal and salt. Mix before adding water and knead for a few minutes. Then add in the butter and mozzarella cheese and knead until the dough is shiny and no longer sticking to the bowl.
- Split the dough into 4 parts. Roll the dough into a ball, then using both of your thumbs push through the middle to make an indent for the cheese.
- Fill it with cheese, then fold in the dough to cover the whole. Shape the dough into a ball once again.
- Make a peace sign with your dominant hand and gently push down as you push inward with the heels of your non-dominant hand and the remaining fingers of the right hand.
- Flatten the dough on each hand until your form a circular disk. Using your palm gently tap the outer edge until it's Smooth.
- On a Medium-heat pan add 1 Tbsp of avocado oil and fry the arepas for 4 minutes on each side until you achieve a golden color with crispy sides.
- Serve warm! Enjoy!
