It does make sense that a pig turns into a zombified piglin after getting struck by lightning, the pig had breathed so much toxic air(for the piglins, not normal animals, it's the reason piglins turn into zombified piglins in the overworld) that it instantly turns into a zombified piglin unlike piglins from the nether who need to breathe in enough of it first
