ONE CARB KETO DONUTS! How to Make EASY Keto Eclairs & ONLY 1 CARB!

Yields: 12
Prep Time: 35 minutes
Cook/Mix: 30 minutes
Refrigerator Time: 30
Total time: 1.5 hours

Directions:
1. In a small bowl whisk together large egg yolks with sweetener
2. Heat heavy whipping cream, until it begins to just simmer.
3. Slowly while continuously whisking, add warm cream to the egg yolk mixture.
4. Return mixture to the pot over medium low heat, until it begins to thicken.
5. Remove from heat, add in butter, vanilla, and xanthan gum.
6. Whisk until fully combined.
7. Place cream in a bowl and cover with plastic wrap.
8. Set in the fridge until ready to use.
9. Preheat oven to 375
10. Prepare a baking sheet with parchment paper.
11. In a bowl add in both flours, and baking powder.
12. In a pot add the water and butter.
13. Heat over medium heat until fully melted.
14. Add in flour mixture and cook mixture while folding until thick.
15. Let cool in a bowl.
16. Add in eggs and vanilla.
17. Mix until fully incorporated with a hand mixer.
18. Then add to pipping bag with large tip
19.Pipe logs.
20. Bake for 30 to 35 minutes
21.Let cool
22. Make ganache.
23. Heat heavy cream until it just begins to simmer
24. Pour over chocolate chips.
25. Let it set for 5 minutes without stirring
26. Then whisk until silky smooth.
27. Cover and set aside.
28. Take pastry cream and add to a piping bag with a filing tip.
29. Fill eclairs.
30. Dip in melted chocolate ganache.
31. Allow to cool and set
And Enjoy!

1:46 to temper eggs properly, you have to drizzle in the milk slowly. You don't add the eggs to the milk. You add the milk to the eggs.

To temper eggs you should pour a little of the hot cream into the eggs not the other way around.

These would be perfect for the holidays, instead of using chocolate ganache, use sugar free white chocolate and in one bowl use green food coloring and in the other bowl use red food coloring. Can also do for Easter using the white chocolate and using pastel colored food dye. The options are endless. Thanks for sharing this recipe!

Tempering is adding a ladle of hot liquid to the other mixture then whisking! Then add it back to the hot mixture! These do look delicious!

Here's a tip: Use a star-shaped piping tip in your piping bag. The star shape actually has a purpose. The shape creates pockets, so to speak, so when you go to fill the eclairs, there are "pockets" of air ready to be filled. Without those pockets, you're just "forcing" the pastry cream into the eclairs, effectively rupturing them, and eclairs that are oozing are not appetizing.

Have to tell u, I made your version of the coconut flour keto fries today, even though I had zero faith that they would taste good or have the right texture…
I was wrong!
They blew my freakin’ mind…the only thing I would add is a little salt to the dough next time bc sprinkling it on after didn’t really work, but they’re so close to the real thing that I’ll never try another jicama, or zucchini fry recipe again!
I’ve found “the one”….thanks to u!

(I used my JosephJoseph rolling pin, the best 20 bucks I’ve ever spent, that have size guides, so I rolled my dough to 1/4” thick and used a pizza cutter to cut the fries)
