Just so we're all on the same page (and for anyone who doesn't already know the story behind this):

"Ievan Polkka" (Savo Finnish for "Eva's Polka") is a Finnish song performed by the Finnish quartet Loituma. It was originally written in the 1930s, but didn't become popular until Loituma performed it in the 1990s.
The Miku cover of this song was released in 2007. This version of it is in fact gibberish (even the Vocaloid fandom page says it.)

Now, about the vegetable; depending on who you ask, they'll tell you it's either a leek, or a welsh onion. Welsh onions, also known as spring onions, or Japanese "negi", are a closely-related species of plants that are most commonly used as a cooking ingredient in Japan, as well as other countries throughout Asia. People often confuse the Welsh onion with leeks, because the two plants look very similar. They also fall into the same botanical family, Allium (which also includes chives, scallions, and garlic).

So then, how did a culinary vegetable, a Finnish song from the 20th century, and a voice synthesizer mascot end up becoming associated with each other?

That then leads us to the "Leekspin meme". For those who don't know what that is, the Leekspin meme is a Flash animation of Orihime Inoue (a character from Bleach) twirling a leek* to a 27-second loop of the 5th and 6th stanzas of "Ievan Polkka". This meme was at peak popularity when the Miku cover of said song came out, and the developers decided to piggyback ride on that popularity by accompanying the song with an animated video of chibi Miku waving a leek.

And that's how Miku became associated with leeks (to the point that her Nenderoid figure made by Good Smile Company comes with a leek prop.)

*there is a lot of debate as to exactly what plant Orihime is twirling, whether it's a leek or a Welsh onion/negi; the four frames that make up the animation were taken from the Bleach anime, and in the Japanese version, it's a negi, but in the English dub, it's a leek. The latter is how the meme got its name.
