Actualy we know why they speak their language, they helped a lot of countries throughout time and started to assimilated parts of each countries language. So they are talking in a mix of every language from english to french and japanese and also spanish and a whole lot other.

In Despeicable Me, they had a bad guy as the main character but eventually he realized his ways were wrong and turned good. In Minions, evil is glorified without any justification.
