How to Make Date Syrup -

Pit and quarter your dates. If they are dry - place them in a a bowl and cover with very hot water. Allow them to soak for 30 minutes. Strain the dates and get rid of the water. Place them in a small pot and proceed as explained below.

If the dates are not dry - place them in a pot and cover them with filtered water. Do not exaggerate with the water.

Simmer the dates for 60 minutes -- making sure to check the water level and stove temperature. They can burn fairly easily so be careful. Add a little more water if necessary.

Remove the dates from the stove and allow them to cool a bit. Strain them through cheesecloth, making sure to squeeze the dates well to get all of the liquid. Do not throw away the date paste that you have left over. It is great for making cereal bars or adding to banana bread.

Rinse off the pot and add the liquid. Reduce it for about 10 minutes, on medium heat. This will make will help to thicken and darken the syrup.

Place the syrup in a heat proof jar. The syrup will thicken more as it cools down. Wait for it to cool down, cover it and put it in the fridge. It will last you for about 2 months.

Use your date syrup instead of sugar. If you are using it to bake use 2/3 cup of date syrup per 1 cup of sugar.
