Did some research and apparently a shorter boil in a pot provides a thinner crust which allows for more expansion when baked but a longer, presumably kettle, boil provides a thicker crust and denser internal texture and the bagel keeps its shape in the oven. Hope this is accurate though.

You should make that bagel that’s just flour and Greek yoghurt. I was making them a lot during Covid quarantine. They’re so easy to make and actually really good !

As a New Yorker, hearing "there's something in the NY water that makes it special" made me smile. The reason why the water tastes so good is because it comes from reservoirs in the Catskill Mountains, which have very little limestone so it contains low levels of bitter tasting calcium which makes it PERFECT for pizza and bagels. We have some of the cleanest best tasting tap water in the country!! Enjoy!!

I tried that at a buffet, it’s really good. I feel like the the cream cheese tastes sweet. I personally like it non-toasted but toasted is delicious too. And the colors are so pretty!❤️

Always get your bagel toasted unless it's super fresh out of the oven. It's a whole game changer

When these were “in”, I went to New York with some family, I tried one. Idk what I expected but it did just taste regular 😂 I thought it would be magical, but it was just cool.

Homemade bagels are SO much better than store bought. I can’t even eat store bought ones anymore

There actually is something special in New York's water! NYC has little crustaceans called coepopods in their tapwater which makes it taste unique. I don't think that affects the bagels at all, just wanted to dump that fact on yall lol

In that case I’d rather get a regular bagel. I feel like if you’re going to put a twist onto the original one, then it should at least taste different too. Maybe, it shouldn’t been sweet to match the rainbow?
