I’m Mexican and I love eating Birria Quesatacos Con Consome...Fir the people that don’t know Spanish that is what she is eating in Spanish.

Birria is originally from Jalisco Mexico (where my parents are from). It’s a slow cooked stew made with goat or beef, chilis (not for spice just color and flavor) and other herbs and spices. So the “dipping sauce” or consomé is actually the stew broth😊

Some places offer it either beef or goat meat mostly cow. Originally it’s Goat. And the “sauce” is actually the broth in which the meat is cooked in. Also there’s a variety of tacos my favorites are Quesotacos which are the birria tacos but with cheese. So Bomb!!!
