I personally really dislike the skipping over writing out the values. The pauses in Sal's videos as he wrote helped give you time to absorb what was happening as you're learning a new concept. I have to pause and rewind David's videos quite often (I should note I'm by no means particularly dense or slow). If you're really that impatient you can always increase the playback speed.
