Kumru (Turkey) on Sandwiches of History⁣

Today is International Sandwich Sunday and we are headed to Turkey to make the Kumru. While I was able to find the sausage for this sandwich, finding kasseri, a sheep’s milk cheese proved a bit more difficult. Fortunately, the European market where I found the sausage had Kaşkaval which I understand to be a similar sheep’s milk cheese. As for finding the bread, no way. So I tried my hand at baking, which as we know is always a crapshoot for me.

I really like how you showed putting in the effort to make the bread and it just not working. It can suck watching cooking vids where everthing always works first time and then trying it myself and it not being anywhere as good.

Your first clue it wasn't working out would be that the dough didn't double after waiting for it to double. As others have said, boiling water kills yeast, packages normally say to keep the water around 105 degrees to get it active.

Adding the boiling water to the mix would have killed the yeast and prevented your dough rising. The ideal temperature for yeast to wake up and do its job is around 37⁰C

Well done on the bread effort, Barry. That has happened to me more than once and, like you, I usually end up saying, "Oh - they sell something similar at the supermarket? Well, let's go get it!" That's also what I say to avoid going fishing.

Barry, you should tell someone that you want a Swedish dough whisk for your birthday. Being that you do a decent amount of baking, it would probably make your life a bit easier.

Still looks delicious Barry! Thanks for showcasing this sandwich... Turkish food in general is such a varied and diverse cuisine, but seemingly all we ever see of it on this side of the pond are Kebabs. It doesn't make a lot of sense to me as to why that is.
