it was believed by historians that the legend of the cyclops was started after the skull of an elephant was found and mistaken for a giant man with one eye. An elephant skull actually resembles this one so i would say this is a reference to that or maybe either of the two. just thought it was interesting

From an actual historical POV tho, the "sus" skull is likely an elephant skull, as they were the inspiration behind myths of cyclopses. The hole in the center is actually the "nose hole" and is where the trunk is. So, this likely either means that elephants are minecraft canon, or the developers just wanted to make some fossils and I'm just looking too far into it..
