If only he wasn’t a parasite and a badass dragon demon (cuz Nidhogg is a zombie dragon in Norse mythology) but I do like how they made him a parasite of the quliphoth roots (cuz nidhogg in Norse myth always chews on the roots of the world tree)

In Norse mythology Nidhogg is a massive dragon that constantly gnaws and chews on Yygdrisil, the World Tree

I do not like this boss fight one bit but this theme is really good. It's very reminiscent of the first three Devil May Cry games, especially DMC3
