Low-Carb Elderflower Cordial step by step. This easy homemade elderflower syrup is sugar-free and so refreshing! Enjoy this sweet, flowery and tangy syrup with a glass of iced sparkling water for the ultimate summer beverage.

🔹Ingredients:
30-40 elderflower heads
2 liters water
2 organic lemons
1/4 cup citric acid (59 g/ 2 oz)
900 g granulated low-carb sweetener, preferably Allulose (2 lbs.)

🔹Instructions:
Place the flowers in a pot with water, add lemon zest, juice and citric acid. Bring to a boil and take off the heat. Cover with a lid and let it rest for 4 hours, or ideally overnight. Strain, add sweetener and cook to reduce to about 1.5 L. Store in sterilised jars. Once open, keep in the fridge.
Depending on the desired sweetness, mix 2 to 4 tbsp of the syrup with 300-400 ml of sparkling water (club soda) and ice.

Recipe makes 1.5L, 1.1 g net carbs per serving (2 tbsp syrup/cordial).
