FULL LIST OF INGREDIENTS:

Makes: 15-20 Enchiladas Prep Time: 15 Mins. Cook Time: 15 Mins.

- 1 to 2 Lbs Ground Beef
- Corn or Flour Tortillas
- 1 Small Can of Rotel (Optional)
- 1 8oz Package Shredded Mexican Cheese
- Sazon (Optional)
- 1 Tsp Onion Powder
- 1 Tsp Garlic Powder
- 1 Tsp Black Pepper
- 1 Tbsp Seasoned Salt or to Taste

TOPPINGS:
- Diced Tomatoes
- Diced Red Onions
- Scallions
- Sour Cream
- Lime Crema

RED SAUCE (Feel free to use the canned store bought sauce!):
- 2 Tbsp All Purpose Flour
- 1 Heaping Tbsp Chili Powder
- 1 Tsp Smoked Paprika
- 1/4 Tsp Black Pepper
- 1 Tbsp Onion Powder
- 1 Tbsp Garlic Powder
- 1 Tbsp Ground Cumin
- 1 to 2 Tbsp Tomato Paste
- 2 Cups Chicken Broth
- 2 Tbsp Olive Oil
- Salt to Taste

You’re one of my favorites! I’ve made a few of your recipes and loved everyone. I love your comedy as well.

Tip: If you fry the tortillas in oil for about 5 seconds each, they will be a bit soft and won’t crack at all. But hey, who cares about a crack 😉!

I made these because I'm on a low sodium diet. It was a hitttty. I warmed them in the oven and dipped them in the sauce (Tip from my Hispanic neice) and not one broke!

If you put some olive oil in a pan and cook the corn tortilla for 40 secs on each side and let them rest on a paper towel (to collect oil) the tortillas won't break and it adds to the flavor!

I made these last week and they turned out delicious. Lots of cracks (thanks for the warning) but totally yummy. I only used one pound and this created two pyrex of enchiladas. I used canned sauce but will try your recipe next time. Thanks for sharing. I’ve tried many beef enchilada recipes and this is the best so far.

iI dip my corn tortillas in the sauce to keep them from cracking .Making your sauce for sure.
