When I click enter on that only entry under "Add Boot Option", the page is blank and there are none of the options like "Add File" pr "New Folder" that I see in yours. Any idea what to do in this case?

If booting still doesn't work for you, check if you have accidentally enabled Secure Boot like me and you're trying to boot an unsigned Linux Boot ISO.
If you enable pre-enroll-keys Proxmox enables Secure Boot by default and you have to manually disable it!
