This curry is something I learnt whilst away last Christmas, the flavours are like no other curries I've tried, fresh, vibrant and packed full of flavour! I've teamed up with the lovely Dean Edwards to whip up this Maldivian chicken curry.

Ingredients

2 x Chicken breasts cut into small cubes
1 x 450ml Coconut milk
1 x Tbsp vegetable oil
8 x cardamon pods, deseeded
2 x cloves garlic
6 x curry leaves
1 x Cinnamon stick
2 x Onions finely chopped
2 x Tbsp tomato paste
1 x Cm of finely chopped ginger
350ml x water
1 x Tbsp curry powder
2 x Tsp turmeric
1 x Tsp cumin powder
4 x Large chopped tomatoes
200g x Basmati rice
1 x Large handfull coriander

In the authentic Maldivian chicken curry recipe, we usually freshly grind our own curry paste, add Maldivian chilies called githeyo mirus, use the chicken bone in and definitely do not use that many tomatoes. Also we cook using thinned out coconut milk first and after letting it simmer, we add the thick coconut milk towards the end to ensure there’s a lot of curry but the consistency remains runny and thick. These are the tips I can give you for next time, this was a great start nevertheless 🥰 highly recommend grinding your own curry paste!!

Great recipe! One thing: I always use chicken thights in curries if possible, or any piece with some bones. The end result compared with just plain chicken breast is CRITICAL.

I was so excited to see someone from another country make a Maldivian dish. It looks good but I’m afraid it’s not a Maldivian curry. I’m a very passionate foodie from Maldives and I love cooking and my roots of cooking comes from traditional cooking so this dose not resemble Maldivian chicken curry. It has no curry paste we have a beautiful spice blend of either paste or powder. And we use thin coconut milk for cooking and end with thick coconut milk. Curry leaves and pandan leaves are a staple in Maldivian curries. In the beginning of the dish the raw spices that was good but after that it went side ways. I’m sure this was a delicious curry but not a Maldivian curry.

We don’t use that much of fresh tomatoes. No coriander Maldives doesn’t have coriander in original recipes. We use curry leaves and pandan leaves. This is just another chicken curry. Don’t call it Maldivian style chicken curry. Also our curries always have Maldivian chilli called Githeyo mirus.

Love the recipe idea (I'm using Cauliflower instead of Chicken) but am having to "wing it" with the Curry Powder, Turmeric, Cumin and Ginger that you list in the ingredients but didn't mention in the video. I'm sure that I will survive. Oh, and never mind the rice, I'm having a go at your Quick Naan.

I made Ian's Chicken Jalfrezi last week & it was superb so I had high hopes for this but boy was I disappointed. The video missed out some of the ingredients which is weird & I added some chillies to give it a kick along with a large splash of fish sauce but the end result was still extremely bland. In the video Ian says don't worry about the amount of liquid as it will evaporate but reducing a sauce with no flavour to start with isn't going to improve it. 800ml of liquid totally overwhelms the small amount of spices & it went into the bin I'm afraid.

Dude, that rice is too wet. Next time add a dash of oil or Ghee to it as it cools along with a tsp of salt.
Curry has good fragrances except taste. Add 3 green chillies slit lengthwise along with garlic.
