Tonight I'm going to reheat some potatoes - cut in small pieces and previously steam cooked. I'll use the given settings - 120 deg, 70% humidity, 8 mins. I'll also attempt to cook a bunch of peas at the same time. Not sure how that will go... :-) Many thanks for your hard work bringing these videos to us. Very useful and much appreciated. This was a pretty good guide to how to use my Miele Steam oven to reheat pizza (for the first time). I was nervous that the steam would make the pizza soggy. I took your advice and added 4 minutes to the normal 2 minutes I would use in a microwave. I also added four minutes to allow the steam oven to get to the 275 degrees. Total 10 minutes. The crust was still crispy and the toppings and cheese were nicely heated. I would probably add a couple more minutes next time to get the pizza even hotter, or bump the temperature to about 300.

I love my Miele combination steam oven, but man, there's just not a lot of information out there on using the various settings for different foods, other than simple explainer videos for the basic functions like this one. As another commenter posted below, I doubt pizza should use this setting, but yet we have one reheat option. My guess is pizza would be better to use some sort of combination convection with a manual burst of steam at some point, but again, there's just no good information out there on this. Not even from Miele's unorganized YouTube channel. I've looked around for some sort of Miele combi steam oven enthusiast user forum online, but haven't found that either.
