How to make a Smores Cheesecake!

*Ingredients*
For the base:
350g digestive biscuits, crushed
160g butter, melted

For the cheesecake layer:
350ml double cream
500g cream cheese
150g marshmallow fluff
120g icing sugar

For the topping:
200g chocolate chips
150ml double cream
Mini marshmallows

1) Add the crushed biscuits and melted butter to a bowl and mix them together.

2) Pour the mix into a cake tin and press it down firmly.

3) Put it in the fridge white making your cheesecake layer.

4) Whisk your double cream to soft peaks in a large bowl.

5) In another bowl, whisk the cream cheese and marshmallow fluff.

6) Add the icing sugar to the cream cheese mix and whisk it in.

7) Add the (now whipped) cream to the mix and fold it in.

8) Scoop the mix onto your base and smooth it out.

9) Refrigerate for 5 hours minimum.

10) Microwave the chocolate and double cream on high for 1 minute 20 seconds then let it cool.

11) Pour it over your cheesecake and smooth it out, letting it drip down the edges.

12) Cover the top in mini marshmallows.

13) Carefully, toast the mini marshmallows on top with a blow torch.

14) Enjoy!

Hi just a question what brand did you use for the cream cheese in the cheesecake? Because I’m from London and I can’t find cream cheese in the stores only soft cheese?
