The key to any good relationship is a Croque Monsieur!

Serves: 1-2
Prep time: 10 minutes
Cook time: 12 minutes
Special tools: cast iron pan

Ingredients:
Croque Monsieur
2 slices sourdough
2 nubs butter
2 tablespoons Dijon
1 cup Swiss, gruyere, or raclette, grated
6 slices ham

Mornay Sauce
1 tablespoon butter
1 tablespoon flour
1 cup whole milk
1 cup Raclette, grated
1 kosher salt
1 black pepper
1 nutmeg

Method
1. Start mornay sauce first with butter and flour, once toasted add milk while whisking. Incorporate cheese and season. Let rest.
2. Toast buttered bread in a cast iron pan on both sides.
3. Spread mustard, and add cheese and ham.
4. Build your sandwich and top it with sauce.
5. Broil on a lower level until caramelized.
6. Remove and enjoy.
