Sounds like your set up is just the ticket!  I purchased an adjustable rod holder which i want to  bolt to the front of my Perception. On an extendable pole, i hope to get some great footage of Bacon Hole.  I have one question for you...have you tipped out with the gopro attached?  My concern is... it could rip the fixing from the boat leaving a ripped kayak or simply come free from the kayak from the rod holder. With a floating bob attached this wouldnt be a problem.  Have you tired this?
I very much  appreciate your advice.

Great footage, and at my fav location! How did you attach Gopro to Kayak? I'm in the middle of attaching one to mine, do you have any advice?
