Oven Roasted Broccoli

Ingredients

1 pound broccoli, rinsed and trimmed
2 tablespoons olive oil
2 cloves garlic, minced
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/3 cup panko bread crumbs
1/4 cup finely grated Parmesan or sharp Cheddar

Directions

Preheat oven to 425 degrees F.

Cut the broccoli florets into bite size pieces. Cut the stalk into 1/8-inch thick, round slices. Place the broccoli into a mixing bowl and toss with the olive oil, garlic, kosher salt and pepper and set aside.

Spread the panko into a 13 by 9-inch metal cake pan and place into the oven for 2 minutes or until lightly toasted. Remove the panko from the oven and add to the bowl with the broccoli mixture. Toss to combine. Return the mixture to the cake pan, place in the oven and roast just until the broccoli is tender, 8 to 10 more minutes. Remove from the oven, toss in the cheese and serve immediately.

Whoa! Broccoli never tasted better! I tried this tonight and it was amazing. I omitted the bread crumbs and used a combination of different cheeses I had in the fridge. Key detail that could easily be missed - set aside 2 TBSP of EVOO and crush 2 cloves of garlic. Put in oil and cover with plastic wrap. Let infuse for 2-3 hours. This gives the dish great garlic flavor. Well done, Alton. This plus a side of ginger glazed carrots does wonders for side dishes.

I tried this but toasted the bread crumbs in a pan on the stove top with melted garlic butter. It was awesome.

I did this but please whip up some egg whites and toss the broccoli in the egg whites first. Then season it with the panko/parmesan and seasonings toss well to coat. Sprinkle or spray a light coat of oil on the pan then place broccoli evenly and lightly sprinkle or spray a little oil over the top and i roast at 350 for About 15 to 20 minutes till GBD the egg whites help the broccoli get crispy by acting as a glue for the panko and cheese and it will help them get brown!

8-10 minutes is kind of short, I do basically the exact same recipe but with parmesan tossed before baking instead of breadcrumbs, roasted for 20 minutes, and that way they come out tender but with some charring and blackened bits instead

Roasting broccoli is life changing, gotta rinse it a day or so in advance so it’s very dry before cooking. Water is the enemy of crispy edges! The crispy broccoli leaves are the best part.

I've done something similar, but with slivered almonds and dark raisins.. it's good 🙂👍

I stopped using a microwave oven in 2012 for that reason and it’s not just broccoli that gets nutrients destroyed. Thanks for sharing knowledge about this fact.

When broccoli is in season, and really cheap, I tend to make this often. Once you've had roasted veggies you never want to go back to steamed or boiled again.
