2 INGREDIENTS PUMPKIN GNOCCHI 🤌🏼 Gluten free & vegan🫶🏼
This is my favorite gnocchi recipe. This time it turned out particularly delicious because I got my hands on this incredible & organic pumpkin. The quality of the food makes all the difference for these minimal recipes!
Ingredients
For the gnocchi
1 cup pumpkin purée (homemade or store bought)
1 1/2 cup oat flour
To spice it up add salt, pepper and nutmeg to taste.
For the sauce
1 cup kale
1 clove garlic
1/2 tbsp olive oil
Fresh lemon juice
Salt to taste
For the cashew sauce blend
1/4 cup cashews
1/4 cup water
1/4 tsp salt
1/2 tbsp nutritional yeast
1/4 tsp garlic powder
1/2 tbsp lemon juice
Form the dough with pumpkin purée, oat flour & spices. Cut up gnocchis and cook in a big pot of salt water. They are done when they rise to the top.
Saute kale with garlic, olive oil and lemon. Add cooked gnocchi and serve with cashew sauce.
