Pork Chop Fried Rice

Ingredients

Pork Chop

- 4 pork loins bone-in(1/2 inch thick)
- 3 tbsp light soy sauce
- 3 tbsp Shaoxing Wine
- 3 inch piece ginger(smashed)
- 2 tsp garlic powder
- 1 tsp sugar
- 1 tbsp baking soda
- 2 tsp Chinese five spice
- 1 tsp white pepper
- 2 tbsp corn starch

Fried Rice

- 3 cups cold old rice
- 3 tbsp pork fat
- 1 tsp sesame oil
- 3 eggs whisked
- 3 cloves minced garlic
- 1/4 cup white portion of green onion
- 1 tbsp soy sauce
- 1 tsp chicken powder
- 1 tsp msg
- 3 tbsp green portion of green onion

Intstructions

Pork Chop

1. In a bowl, combine all marinade ingredients and marinate pork chops for at least 30 minutes.
2. In a deep pan or heavy bottom pot, heat around 2-3 inches of neutral(I like to test if the oil is hot by using a chop stick and seeing if it bubbles).
3. Fry the pork chops on each side for 2-3 minutes

Fried Rice

1. Heat up pork fat in a wok or pan and sauté white portion of green onion and minced garlic on high heat.
2. Right when the garlic starts to turn brown, add in the whisked eggs and constantly mix.
3. Once the eggs start to solidify but not turn brown, add the rice, and seasonings.
4. Add in green portion of green onion and toss.

Serve your Fried rice with the pork chop on top!!

For some recipes you can replace MSG with pickle juice. This works exceptionally well when marinating chicken and pairs well with peanut oil for the frying. I do this when mimicking the Chick-fil-A marinade

Din Tai Fung actually uses chicken bouillon powder to flavor this dish and many other items on their menu. So this is a good option if you're still terrified of MSG.

MSG makes me dumb for about half an hour then I feel okay, I rather use mushroom powder cuz it’s natural and still gives umami

MSG is a type of salt. Salt is bad for you. Hence, MSG is bad for you.
