You can snap a neck with no mods, grab the shoulder and head, while you twist the head 2-3 times push the shoulder back. Your welcome!

I had some sort of miracle happen in my game (unmodded), where I could snap necks by messing with the enemy's models so they clip inside themselves and instantly die from their own self-inflicted bludgeoning. I never could replicate it since that night, but I got it down to a science for that one night.
