It's easily possible for scientific theories to explain all the data it currently describes. But obviously new data can arise at any given moment that cannot be explained by said theory, which opens the way for the theory to be modified (or, if necessary, thrown out the window) to reflect the new data. That's the beauty of science.

Completely false. First off there is no theory that explains all the data. But if there were, like all theories, that theory would make predictions about the data and observations may not match the predicted data and so it is falsifiable. No one claimed that evolution by natural selection explains everything either but that’s besides the point.

It was an initial understanding and the beginnings of what we knew then. So pulling something to bits over hundred plus years ago can be applied to many other things.

This guy doesn't know what he's talking about. Falsifiability means that you can't set up experiments to disprove the theory. But you can use evolutionary theory to make predictions about the kinds of organisms you should find in an area, or the structure of organisms based on their developmental environment. And when you do, the evidence always agrees with the predictions, which supports the theory.
