This easy farro salad is packed with crunchy vegetables, a tangy vinaigrette, fresh herbs, and delicious chewy farro.

It's a tasty, satisfying, and colorful recipe. It's excellent to make ahead and bring to potlucks, barbecues, cookouts, and picnics or as a healthy lunch or quick dinner.

⭐️ Ingredients
FOR THE SALAD
1 cup (200 grams) farro uncooked
3 cups (700 grams) vegetable broth + 2 bay leaves optional
1½ cups (210 grams) cucumber diced
1½ cups (240 grams) cherry tomatoes halved
1½ cups (210 grams) green bell pepper diced
½ cup (80 grams) corn canned
½ cup (60 grams) pitted olives sliced
⅓ cup (30 grams) red onion chopped
⅓ cup (10 grams) parsley finely chopped
1 can (15 oz) (230 grams) chickpeas

VINAIGRETTE
2 - 3 tablespoons (30 grams) extra virgin olive oil
2 tablespoons (30 grams) vinegar apple cider or red wine vinegar
2 tablespoons (30 grams) lemon juice
½ teaspoon dried oregano
½ teaspoon salt or more to taste
¼ teaspoon black pepper

I love farro. I do this and sometimes add a little feta, basil, slivered almonds and red chili flakes.

-Rinse
-Cook 20 minutes in broth
-Cool on tray: spread out, lemon juice
-While cooking make dressing:
—-Olive Oil EV
—Lemon, Oregano, Pepper, Salt:shake

Put in bowl, add onion, cucumber, dressing, cherry tomatoes. Anything really.

Add dressing and lightly mix.

Just want you to know that you are so popular in my town that I can’t buy Farro anywhere. This always happens when there is a recipe that is so good, oh well maybe I will try another if your recipes and wait until the farrobis replenished

I can't use the farro but using black rice or quinoa is ok. I use peanut butter, lime juice, low sodium soy or bragg aminos, maple syrup or local honey, and sesame seed oil, ginger, with some Sriracha or similar hot sauce for the dressing.
