【Ang Mo Kio #4 - S11 Jin Long Wu Xiang Prawn Cracker】

People living in Ang Mo Kio are pampered with plethora of hawker food spread over nine major hawker centers and many other coffee shops. If you have only a day to try all the different types of hawker food in Singapore, Ang Mo Kio is definitely the place to go.

With Singaporeans' love of crispy flavourful fried food items, no wonder Ngoh Hiang is such a popular dish here! You can find it in almost every hawker centre in Singapore.

The name ’Ngoh Hiang’ refers a fried meat roll filled with minced pork and prawn filling. This traditional dish is said to have originated in Fujian province in China and is named after the five-spice powder used in Chinese pork sausages.

Nowadays, we refer to Ngoh Hiang as a hawker stall selling a whole array of crispy deep-fried items, usually eaten with vermicelli for breakfast or a lunchtime treat. Century eggs, prawn crackers, fish cakes, ‘guan chang’ (pink-coloured sausages) and of course Ngoh Hiang are some of the popular signature items. A Ngoh Hiang meal would not be complete without the accompanying bowls of pink, gooey sweet sauce and brownish savoury chilli sauce. It is not easy to find authentic versions of this well-loved meal these days, and hawkers continue to create more innovative items to vie for more regular fans.

Did you have a hard time figuring out how we piled up the vermicelli? Here is what we did: First, we stacked some fish cakes to make a tower and covered the entire structure with vermicelli. We then balanced the all-time-favourite crispy prawn cracker on the tower and gingerly arranged all the other ingredients on top. Reminds us of those elegant ladies' hats at the Kentucky Derby races! To add some greens to the dish, we added some leaves from our backyard. If you watched the video, you would see the pink sweet sauce make a special appearance towards the end.

We would like to thank S11 Coffee Shop Jin Long Wu Xiang stall near Cheng Sa Market for preparing and serving such wide variety of Ngoh Hiang items. This is an un-sponsored series in which we hope to raise awareness of our rich local hawker food culture and help local hawkers during this unprecedented period. Join us on this journey of rediscovery where we dabao and transform our local favourites into works of gastronomic art, one district at a time. Tag us in your post if you would try your own ‘dabaogram’ at home.

We hope you’ve enjoyed our tour in Ang Mo Kio so far, take part in our IG Story poll to share with us which is your favourite dish!

Next stop, Seng Kang! See you soon!

Very dishonest seller. I used to patronize often but decided not to. Will tends to steal or reduce your chosen item when nobody is noticing and still charged you for the full amount. I have photos to proof
