Take a look at the Marlin docs. M163 through M166 are the ones you need to see. You set them with M codes. I think you can set a static startup Gcode in the config, but it would probably be better to do it as a preamble in your slicer.

I found you looking for in on how to assign mixed colors in gcode, so I don't have to try to do it on the console during the print. I don't have those answers yet.
