So if we have no water after three days and I'm only able to store 100 gals of water, I'll likely have to resort to collecting rainwater in buckets. Do you have a recommendation to add minerals to the distilled rainwater after it's been filtered through my Berkey? I can look into stocking up on mineral additions to be better prepared.

Most preppers know that the only contingency plans that count are their own. The government will save themselves but never you.
