Thanksgiving Leftovers Casserole

Mashed potatoes
Corn
Green beans
Turkey
Gravy
Dressing

Using a well greased 9 x 13 casserole dish, layer your mashed potatoes, any other vegetables you have left over from Thanksgiving dinner (we used corn & green beans), turkey, gravy, and dressing. If you don’t have dressing left over, crush up some Ritz Crackers and stir in a little melted butter to sprinkle over the top of the casserole.

Bake at 350° for 30 to 60 minutes or until the middle is hot. Let the casserole sit for 20 to 30 minutes to firm up before scooping into bowls. 

This is very similar to a turkey pot pie.

❤❤ Tom I did the same thing BUT I kind of did Sheppard's pie.
Since dressing is heavier than mash potato I put dressing at bottom and did everything you did.
Except the mash potatoes went on top and sprinkle some very, very fine cheese.
IT WAS A HIT.

I’m with you Tom. I think cook once and eat 3-4 times. I may fix a couple of other meals but if I cook a pot of chili or veggie soup we eat on eat for 2-3 days then I’ll cook a fresh meal then more chili, I’m not wasting food. And this meal looks fantastic and honestly I might put ham on top of all of that but if I didn’t have ham I’d just leave it meatless. Thank you for sharing. Wanted to tell you that I made your after Thanksgiving casserole made of leftovers. My sister is a picky, picky, picky eater and she loved it. Said it was better than original dinner. My Mama used to boil the turkey carcass and made a delicious bone broth. Then she used that broth to make a gumbo and man was it good!
Today I toasted light bread and made a sandwich with cranberry sauce, smoked Turkey breast and cornbread dressing! It was a thick sandwich. I heated everything except the cranberry sauce. It was cold but I wanted it that way. Y’all should try it. Delicious. My son bought that turkey breast from a local bbq place that does a fantastic job.

I cooked a big Thanksgiving dinner yesterday for myself and my guests. I made everything from scratch. One of my vegetables was a cauliflower au gratin. I honestly have only turkey and the cauliflower left over LOL This recipe of yours looks so good, I am inclined to peel a few potatoes to make a small batch of mashed potatoes and use some canned vegetables that I keep in the pantry and take a quick run to the grocery store at my corner for a box of stuffing mix and gravy just to try this recipe tonight. This is one of the very few years that I did not have leftovers here at home after packing up food for my guests to take home. Thank you for sharing this. It looks delicious!
