Number 7 isnt correct. There is A Memorial day for the fallen soldiers and a Memorial day for the holocaust.

A little correction: it's common to give 10% and 15% if the service was outstanding in restaurants. About the memorial days, there are Yom HaShoha (Holocaust Rememberence Day) and Yom Hazikaron ( Rememberence Day for the fallen of war and terrorism). The Independence Day is a celebration day

What surprised and confused me most were the Sabbath elevators. It's considered work if you push the buttons in an elevator on a sabbath day. So some buildings have a sabbath elevator that opens and closes for you, taking you one floor at a time without you touching the buttons.

If you decide traveling to Israel I recommend going to the less known places and not only the big citys. I know from experience that you'll have more fun going to places that are with nature. Anywhere that's kakal is totally safe to go to

Tipping at a sit-down restaurant with a waiter is pretty common (15%), but not mandatory. Tipping everywhere else (doorman, package delivery, even taxis) is a lot rarer, but they won't refuse it if you do tip.

Yes! Always hire a guide. Let me know if you need one. Those 2 years are brutal but worth it to be a tour guide.

using taxies in Israel is not RECOMMENDED at all. super expensive; better to use buses or trains.
in Tel Aviv, you can dress as sleaziest as you want

You forgot to mention Shabbat and holidays. Yom Kippur the whole country is closed and fasting. Shabbat the whole country is resting, matters where you are.

On tipping: There is _no_ tipping at Lod (the airport), even for wheelchair pushers. (Ditto Spain.) Be patient, "sav-la-nute" -- you'll get through lines faster. Know how to say "please" (ba-va-ka-sha) and "thank you" (toe-dah) in Hebrew. Please & thank you ALWAYS make life better every place you will go in the world.
