That's a beautiful sear! the sear makes a huge difference when slicing, if it's cooked to much it just falls apart. It's really impressive to see you go from working in a pub to doing tasting menus! Nice job!

It breaks apart with the sawing motion of the knife. Try one solid cut from end to end all the way through and see if that helps. I just get a longer knife to help with this.

Dude never feel bad about fillet'ing anything. In my eyes cutting it perfectly takes years and technique. Like you said cut does matter but i still hold this mindset with my own cooking. Its part of the fun 😊

Don't saw the knife, it should be one smooth motion through. Another thing you can try is cutting the seared ends first. The problem you might be running into is that since the tuna is seared at the ends, the proteins there might be a bit tougher which the knife grabs onto and could be causing it to break. If you cut the ends first, you'll have probably an easier time getting the rest of the tuna sliced and you can do your butterfly technique at the end. Keep up the great work!

Love this! Butterfly technique is a must. A chef taught me when working with fish tho especially more delicate fish, it’s good to keep the same slicing motion instead of sawing movement back at forth could ruin the texture of a more delicate fish
