Weshammer recently did a very interesting video on how souls work in 40k. A person's soul isn't actually inside their body in this universe, rather its anchored in the Warp. Szeras wasn't technically yanking his soul out, rather he was pulling it into the materium and cutting its connection to its owner.

Those little green lights are molecule-sized nano machines, he used them to haunt the guard's body so he can study his biology, so basically we can assume that he is extracting biomedical and mnemonic information, he also uses them to do something else terrible to us that we don't understand because our brains are too primitive and he is literally an extremely complex machine is evolved.

It actually is not the soul of the guardsman. They are nanoscarabs if I'm not wrong, miniscule necron bots, also responsible for the self-reparating properties of necron living metal. We know that Illuminator Seraz was doing sone experiments on the human population of the pariah nexus, in fact those zombies you see in the animated series are his failed speciements.
