Blue Hawaii, Reconstructed

The Original Blue Hawaii was invented by Harry Yee, the legendary head bartender at the Hilton Hawaiian Village in Waikiki in Honolulu on the island of O'ahu, Hawaii. This drink, is a wonderfully pared down reconstruction of that original drink, stripping out the citrus and keeping the base elements of the recipe. On paper this drink doesn't work...it seems to break some fundamental rules, but once you taste it, oh boy does it ever! I didn't conduct a postmortem on this drink, as writing this now I wish I had, because in a word, it is brilliant. This reconstruction comes to us from NYC Barman John de Bary, who was lucky enough to land at the legendary bar PDT before he knew which end was up and went on to run the cocktail programs for the restaurant that counted Momofoku in it's Arsenal. This drink is very much worth your consideration. Hope you guys go and make it. And yes you can use MALIBU if you want.

I love seeing “disco drinks” or “club cocktails” improved, while still staying faithful to the original and without losing the heart of it! This looks great, I think I'll add some lime juice in the spirit of the original recipe, like you suggested.

Got a bottle of blue curacao around 10 days ago and I already used half of it. Been doing blue drinks almost every night and all of them are amazing! Blue Hawaii, Blue Hawaiian, Blue Lady, Blue Lagoon, Cactus Jack, Bikini Martini, Swimming Pool and I'm probably forgetting so so many!

Don Lee was my instructor for BarSmarts when I did my final test. He gave me great advice that I use to this day. Wish I could advance my bartending career now but it’s tough in Covid times

Fabulous formula of ingredients. I love trying different drinks. And this blue drink is actually very sophisticated. I am glad you have rounded yourself to be open to blue drinks. I do not have this blue liqueur, but am interested in it.

If you only knew what a service you did to those of us with Asperger's with your opening history. You answer a lot of questions I'd always have associated with the drink every time I made, ordered or saw one.

Although a lot of the time I just want a video that shows the hardcore practical information, I can also always skip to that in your video as well. The history is something I would have to search down when I reached a point I couldn't stand the questions anymore.

Made this the other day.... it definitely benefits from some lime juice. I added .25 oz. lime to the listed specs and it was deliciious!

Props on the structure of the foam on top of the drink. As it settles, I think that foam is getting thicker.

Given the very low quality of Blue Curacao available in my stores, what do think about taking a small amount of Pierre Ferrand and adding blue food coloring bit by bit to make some?

It seems like this would be a blue Hawaiian, coconut liquor instead of cream of coconut. Doesn’t the blue Hawaii have vodka and lime in it?
