This is an awesome recipe even though I don’t use the mint. Spanikopita and tiropita are my favorite things. Yummy! Greek food is really delicious.

I never had a springform pan, nor did I have patience for making little triangles. So, I put my Austrian influence to good use and rolled up the filling to make strudels. I brushed butter both on the leaves and on top of the roll. I've also seen the filling lightly packed into a springform pan and oiled ribbons of phyllo dough generously placed on top.

This is was different from my Yiayia's recipe but I'm loving the ease of it and I know from personal experience that you are an awesome cook so next time I make spanakopita, this will be the one I make.
