Marmalade Glazed Ham

Servings: 12 or more
Preparation Time: 30 minutes
Cooking Time: 1.5 hours

Ingredients:
- 1 ham on the bone
- 1 jar of breakfast marmalade
- 2 tbsp (30ml) Dijon mustard
- 4 tbsp (60ml) hot honey

Method:
1. Begin by removing the skin from the ham. You can do this either with a knife or by peeling it off with your fingers.
2. Score the ham in both directions, creating a diamond pattern. Be sure to cut just through the fat layer.
3. Preheat your oven to 160°C (320°F) on the fan-forced setting.
4. In a small saucepan, combine the breakfast marmalade, Dijon mustard, and hot honey. Warm the mixture over medium heat, stirring continuously, to create a homogeneous sauce. The aim here is not to boil it, but simply to blend the ingredients well.
5. Pour approximately half of the glaze over the ham, spreading it evenly.
6. Place the ham in the oven and bake for 40 minutes. Then, reapply more glaze every 10-15 minutes for another 50 minutes, totalling 1.5 hours of cooking time.
7. Once done, remove the ham from the oven and allow it to rest for 10 minutes before carving.

I usually put cloves at the top of every diamond shape.
You can decorate with caramelised Pineapple or add cherries.
Experiment with the glaze
Try Maple Syrup, smoked paprika and barbecue sauce together.
Try honey, barbecue and sweet chilli sauce together.
There are many options and flavours

In the USA, supermarkets/grocery stores generally only sell hams with the skin already removed. You would have to go to a butcher shop or specialty market to get a skin-on ham. BTW, fried pork skins ("pork rinds") are amazingly delicious. That's probably why skins are removed because they can sold as snacks at higher prices as fried pork skins/rinds (aka "chicharrones" in Mexico and most of Latin America)

Finally someone using marmalades and not brown sugar.
I often just put fig preserve and cloves on my ham for a simple, delicious ham. So much more flavor in the fruit preserve than just brown sugar.

We always hard fried the skin in thin strips. In KY, USA, we call those "cracklings". In a heavily salted "country" ham, we soaked slices to remove salt, and fried the slices. Coffee was added to the remaining ham fat and it is called red eye gravy, or coffee gravy. It's fantastic served over homemade biscuits. I like the idea of glazing a regular ham with marmalade. My mother used brown sugar and stuffed the ham with whole cloves. That was delicious too. Ty for the vid. If I can afford a ham, I may try your recipe.
