What program do u use to control the camera and see the pictures at the same time in your laptop?

I really want to understand how many shots to take though.. fps I understand.. but how do I know how many shots to take for 12fps or 10fps?

It does my head in trying to work out how far to move things, how many shots to take, etc to get semi-realistic movement but still has that distinct stop motion style.
