INGREDIENTS
Watermelon
1 tsp citric acid 
Pinch of salt
2 tsp sugar 
Hot water
 
METHOD

Cut watermelon into several large chunks.
Fill two glass jars with the pieces of watermelon. Fill with boiling water and let stand for 15 minutes.
Strain the water. Add a tablespoon of sugar, citric acid, and a pinch of salt, and fill with water. Put the lids on. Store for up to 6 months.

Just saw a video of an elderly Indian woman doing this. She took and cover it afterwards. She added other spices as well. I also note she salted the outside of the watermelon (rind) than washe it off before slicing it up. This would help to remove and destroy the bacteria.

You don't add the watermelon juice back into it?

That doesn’t look like it would taste very good after 6 months. Especially with citric acid.
