It’s stringy because you had it on the heat, remove from heat before adding cheeese. Residual heat will melt it

That looks delicious but those are smothered burritos, not enchiladas. Enchiladas are made with corn tortillas.

Please if you’re going to put recipes on YouTube give clear instructions.. especially when making a rue. Low heat/ high heat is detrimental and I literally wasted 30$ worth of food trying to make this cheese sauce and ate nothing. I should’ve watched the entire video thru/thru before I bought anything for this but I wasn’t thinking there wouldn’t be simple instructions for what heat to use when cooking the cheese. We cook a lot but have never made a cheese sauce. And yes I literally tried everything, we threw it out 4 times and it still came out horrible on the 5th. Tried more flour, less flour, low heat, high heat, less butter, more butter, more cream, less cream.. the final product on the last try looked right.. until it came to pour on the tortillas, it started to thicken up but we just hurried and put it in the oven thinking it would thin again in the oven.. no, instead it completely separated the butter from everything else. I’ve never cooked something and it not been somewhat edible but this was not edible.. Not sure what happened but I’m not blaming this creator specifically, just made a really bad day SO much worse and needed to vent. PLEASE MAKE INSTRUCTIONS CLEAR!!!! :( also if it wasn’t in the mist of already cooking I would’ve found another clear video on the subject but we had already went thru all the ingredients trying to remake it.
