Muradabad biryani:

Ingredients:
- 1 kg chicken
- Salt to taste
- 150 g curd
- 7 green chilies, chopped
- 2 black peppercorns
- 4 green cardamom pods
- 3 cloves
- 2 bay leaves
- 1 cinnamon stick
- 2 tbsp ginger-garlic paste
- 2 tbsp lemon juice or vinegar
- 2 tbsp biryani masala or garam masala
-1/2 kg Basmati rice, washed and soaked for 25 minutes
- 3 onions, chopped
- Saffron strands soaked in water

Steps:

1. In a bowl, mix the chicken with salt, curd, chopped green chilies, whole spices, ginger-garlic paste, lemon juice or vinegar, and biryani masala. Let it marinate for 20 minutes.

2. Wash the basmati rice and soak it in water for 25 minutes.

3. Heat oil in a pan and fry chopped onions until golden brown.

4. Add the marinated chicken to the pan and cook on medium heat until it's 80-90% done.

5. Drain the soaked rice and add it to the chicken mixture. Pour in water (for 1 cup of rice, use 2 cups of water).

6. Cook for a few minutes until the water starts to evaporate.

7. Once most of the water has evaporated, sprinkle saffron water over the rice.

8. Cover the pan and let it cook for about 10 minutes until the chicken and rice are fully cooked.

9. Garnish the Muradabad biryani & serve hot along with curd and green chutney.
