Marinated Chicken Romaine Sandwich with Creamy Herb Dressing

Ingredients:
Chicken:
• Chicken breast, thinly sliced
• Dijon mustard
• Olive oil
• Soy sauce
• Sweet chili sauce
• Olive oil (for cooking)

Creamy Herb Dressing:
• Sour cream
• Japanese mayonnaise
• Dijon mustard
• Lemon juice, freshly squeezed
• Fresh dill, chopped
• Fresh chives, chopped
• Salt
• Black pepper
• Water (if needed, to thin the dressing)

Sandwich:
• Romaine lettuce, chopped
• 2 slices sourdough bread, toasted

Instructions:
1. In a bowl, mix Dijon mustard, olive oil, soy sauce, and sweet chili sauce. Add the thinly sliced chicken breast and coat evenly. Cover and refrigerate overnight.
2. Heat a skillet with olive oil over medium heat. Cook the marinated chicken slices until golden brown and cooked through. Note: Avoid high heat, as the marinade can cause the chicken to burn quickly.
3. In a bowl, whisk together sour cream, Japanese mayonnaise, Dijon mustard, lemon juice, dill, and chives. If the dressing is too thick, add a little water until it reaches your desired consistency. Season with salt and black pepper to taste.
4. Toss the chopped romaine lettuce with the creamy herb dressing.
5. Spread a generous amount of the dressed romaine lettuce on both toasted sourdough slices.
6. Layer the cooked chicken on one slice and close the sandwich with other slice of sourdough.
7. Serve and enjoy.
