Thanks for the great video. I've used this product to patch cracks and holes. It works well as long as it is applied quickly and accurately. The key to a professional looking result is to use several thin layers of joint compound rather than trying to do it all in one go. The time it takes for the joint compound to completely dry will depend on the prevailing climatic conditions. In cold and / or humid conditions the layers will take longer to dry.

My first thought was couldn't you just hold it up to the wall and then spray water on it to soak it? That way it wouldn't have such a desire to fold up and stick to itself as you remove it from being submerged in the bucket?
