This recipe looks great, but I have a good tip to prevent watery cauliflower mash. Instead of steaming the cauliflower on the stove, put the raw florets in a microwave-safe bowl, with only a tablespoon of water and/or heavy cream in the bottom of the bowl. Put a damp paper towel over the cauliflower, and microwave it on high in 4 to 6 minute increments, stopping to stir and rewet the paper towel if necessary. Keep microwaving until the cauliflower is tender, and then go from there. There is no liquid to drain, and your mashed cauliflower will have a drier, denser texture that is similar to mashed potatoes. I learned this method from the cheesy cauliflower mash recipe on the website “I Breath I’m Hungry.” It works really well!

After I drain my cooked cauliflower, I return it to the pan, place on low heat, and with a silicone spatula, constantly stir for a few minutes to dry it out some. Then continue with adding the sour cream, cheese, etc.

I do a variation on this already. I steam the cauliflower, quickly mash it with a fork or potato masher, add the cheese while it is still very hot, it will help melt the cheese. I add the sour cream last. If the sour cream is first it will be more difficult to melt the cheese. Mine is not as smooth as your recipe, but still very good. Yes, it’s a great side dish you can tweak with your favorite seasonings.❤️

Hi Carolyn, all your recipes are great! i keep on trying new onces. I tried to put the califlower on a steamer grid to avoid water by cooking completely and then the puree is really dry. it was very tasty, thank you. Have a nice day.

I normally use a manual potato masher. I never thought of using the blender or food processor. Great tip.

This is wild. I have a a men's dinner at my church in another two weeks just a few of us and I wanted to make mashed cauliflower, so when I saw this I was like oh I have to see this so I'm definitely making this couldn't come at a perfect time. It looks delicious!! Thanks Carolyn ❤️🙂

Don't know if I missed it But how's it compare to mash potato's ? Can you use frozen cauliflower ?
I eat to much potato's as it is and need a easy substitute for my bone broth gravy.
